Next, I will show you how to prepare some delicious Picarones, one of the most traditional desserts of Peruvian gastronomy.
Ingredients
PICARONES:
1/2 kg of winter squash / pumpkin
300g of yellow sweet potato
3 cups of warm water
50g of yeast
Pinch of salt
1 tablespoon of sugar
1/2 kg of unprepared flour
1 tablespoon of anise in grains
Abundant oil
MIEL:
1/2 kg of sugar
1 cinnamon stick
5 cloves
1 fig leaf
Water
Preparation
Step 1: Picarones
In a pot, place the water and cook the squash/pumpkin and sweet potato (medium heat; 20 min). Strain and reserve the water. Let the squash/pumpkin and sweet potato (already strained) cool.
In the reserved water (another container), dissolve the yeast, salt and sugar. Cover and let rest (20 min). Then, pour over the pumpkin and sweet potato mixture. Knead.
Introduce the flour little by little and knead (15 min).
Add anise to the dough. Knead until bubbles appear. Put the dough into a container, cover, and let it rest (2 hours).
In a deep pot, place abundant oil. Heat up (medium heat).
With wet hands, take a piece of dough and make a central hole (picarones have a ring shape). Place the ring-shaped dough, the "picarón" in the pot until it browns (wait only a few seconds). Remove it from the pot.
Repeat the process until the dough is finished.
Step 2: Honey
In another pot (medium heat) introduce the sugar, cloves, cinnamon, fig leaf, and water. Cook (20 min).
Spread the honey over the picarones (or put it in a separate container).
