Now it's time for a crema volteada! (20 portions)

Ingredients

  • 12 eggs

  • 3 cans of evaporated milk

  • 3 cans of condensed milk

  • 2 teaspoons of vanilla

  • 2 cups of sugar

  • 1 cup of water

Steps

  • Bring a cooking pot with the sugar and water to the fire. Leave until it turns into a caramel color.

  • Pour the caramel into a mold very carefully because of its high temperature.

  • Turn the mold until all of the bottom of the mold is covered by the caramel.

  • In a bowl place the two milks (evaporated and condensed). Stir with a whisk. Add all the eggs and vanilla. Stir again with the whisk.

  • Strain this mixture eight times.

  • Place this mixture in the mold where the caramel was spread.

  • Bake in bain-marie (double boiler) for 2 hours at 100 ° C.

  • When it is ready, let it cool for a few hours. If possible, unmold the next day.
