Ingredients
4 chicken breast fillets
2 tomatoes, peeled and chopped
2 tomatoes, blended and strained
2 tablespoons tomato paste
1/4 of chopped onion
2 bay leaves
Toasted and ground whole wheat bread
200g of grated motzzarella cheese
200g of sliced mushrooms (optional)
Oregano
Salt and pepper to taste
Steps
Put the breasts beetween plastic wrap and stretch them
Add salt and pepper to them; and then bread them.
Brown the breasts (both sides) in a pan.
Prepare the sauce: first, in a pot, brown the onion. Then add the tomato paste, the chopped tomato and the blended tomato. Then, add the bay leaves, salt, and pepper. Cook until a very thick sauce is left. Finally, remove the bay leaf.
Put a tablespoon of the sauce over each fillet.
Add the grated motzzarella, the mushrooms (or other ingredient of your choice) and the oregano.
Bake at 175 ° C until the cheese has melted.
