Ingredients
For the dough:
6 egg yolks
2 and 1/2 cups of unprepared flour
1/2 cup of white sugar
150g butter
2 teaspoons vanilla
2 teaspoons of salt
For the filling:
4 cups of sliced apple
200g of sugar
Roasted pecans
Ground cinnamon
For the end:
1 egg yolks

Steps
In a food processor, mix the egg yolks, runprepared flour, white sugar, butter, vanilla and salt (ingredients for the dough).
Divide the mixture in two.
Place both pieces in the refrigerator with "film" paper. Let it rest overnight (around 10 hours).
After time, sauté the chopped apples, sugar, pecans and ground cinnamon (ingredients for the filling).
Butter a circular mold approximately 30cm in diameter.
Remove the dough from the refrigerator. Place flour on a base and on top, roll out one of the two pieces of dough with a rolling pin). Place it on the mold.
With the dough on the mold, put the filling (chopped apples, sautéed in sugar, pecans and cinnamon).
Roll out the other half of the dough, and cut it into 1.5 cm wide strips. Place the strips on top of the filling, intertwining them.
Paint the dough strips with an egg yolk and heavy cream.
Bake the pye in a preheated oven at 180 ° C. Bake time: 30 minutes.
